About the product: In upper-middle class houses of Constantinople (currently Istanbul), trahana was typically infused with a variety of flavors and aromas. Agrozimi revives Constantinople-style trahana –durum wheat flour is mixed with tomato paste, red pepper and onion and naturally air-dried to maintain its flavors and aromas. The delightful mixture is further enhanced flavor-wise with the addition of dried spinach, leek, onion, basil, red pepper and boukovo (red pepper flakes). Aromas of the Great City, in a dish of unique intensity and depth.

About the company: A 40-year-long history in Pella, Macedonia, Greece. In 1969, Ghiorgos Martavaltzoglou, an Asia Minor refugee, sets up a bakery in his home village, Aravissos, Giannitsa, where he makes bread and traditional pies. A few years later, in 1974, the second generation puts up a flour mill which grinds top-quality flour. In 1980, the modest mill grows into a traditional food cottage industry. In the years to come, consumers’ trust and a rapidly increasing demand spurred the company into expanding to include the production of pasta – hilopites (Greek egg noodles), flour trahana, couscous etc.

Instructions: Use a small amount of water to boil the trahana and enjoy by adding some lemon juice or some feta cheese.
